Our Hard Cheese Kit includes the additional items and ingredients needed to complete the Universal Base Kit and make multiple batches of various cheeses including Gouda, Cheddar, Monterey Jack, Parmesan. These cheeses require more time than the rest of our kits, months rather than days or weeks, but the results are worth it! Humidity and Temperature control are key to the getting the proper rind formation and preventing wheel splitting. If your cheese cave or refrigerator doesn't have settings for the desired temperatures, consider picking up one of our Temperature Controllers as well as a Hygrometer which measures the humidity in your aging space. These cheeses are sure to impress those you present them to and provide a fun cheesemaking experience to the home cheesemaker looking for a new challenge. Note: while stacking heavy cans or bags of sugar/flour on top of the mold can provide the pressure necessary to press hard cheeses, our Cheese Presses will make pressing much simpler and easier.
