Used for Merlot, Cabernet Sauvignon, Zinfandel, Syrah. This yeast is a vigorous fermenter. Alcohol tolerance can be up to 16%. Optimizes color and structure with soft tannin extraction and increased mouthfeel. It does not generate a lot of heat during fermentation.
