10 lbs. British Pale Malt
5 lbs. US 2 Row Lager Malt
2 lbs. Red Wheat Malt
1 lb. German Munich Malt
1 lb. Medium Dark Crystal Malt (Caramel 60)
8 oz. Carapils Malt (last 15 min. of mash)
3 and 3/4 tsp. Gypsum
1/8 tsp. Epsom Salts
1/2 tsp. Calcium Chloride
1/8 tsp. Powdered Chalk
2 tsp Irish Moss
3/4 oz. Northern Brewer Hops(60 min.) 10.95 IBU
1 and 1/2 oz. Spalt Hops (60 min.) 10.20 IBU
1 oz. Saaz Hops (30 min.) 2.79 IBU
1/2 oz. Northern Brewer Hops (30 min.) 2.21 IBU
1/3 oz. Kent Golding Hops (30 min.) 1.86 IBU
1 oz. Hallertau Hops (Add @ 150 F.) 1.19 IBU
1/2 oz. Saaz Hops (Add @ 150 F.) 1.34 IBU
2 packs #1028 #1056, or #WLP002 Yeast

SG 1.050 IBU 30.54

Upward Infusion mash w/90 min. Sugar rest @ 150 F., 60 min. sparge, and 90 min. boil.
