  • Diammonium Phosphate (DAP) is a potent source of Nitrogen for wine and cider fermentations. It is used strictly as a nitrogen source in combination with other nutrients such as Fermaid K to provide a balanced diet for yeast in fermentation.
  • Typical usage rate is 1 g per gallon to raise the level of free nitrogen for a healthy fermentation, however, exact usage rates should be determined based on the YANC (yeast assimilable nitrogen content) level of the juice or must.
  • One gram per gallon adds about 55 ppm Nitrogen.
