For large cheesemaking operations, this unit will allow you to operate a humidifier, a de-humidifier, or both. This allows you to actually select a target relative humidity level and acheive it.
For small cheesemaking operation, it may not be practical to use a humidifier or de-humidifier, but you still need to measure the humidity of your aging space. This unit can be used to monitor the humidity. The reported humidity value can be calibrated easily for accuracy.

The controller is easy to use and can maintain a very narrow temperature range because it can be used to control both cooling and heating systems. The included temperature probe is detachable and comes with a five foot cable.
