Natural Calf Rennet Powder, 1 tablet coagulates 20 litres or 5 gal. of milk. Dissove in clean, cold and chlorine free water. Store cold and dry. Many cheesemakers feel that natural calf rennet provides a better cheese product, especially concerning the flavor development during aging. Tablets are scored and can be broken into 4 pieces.

Vegetarian rennet is the most commonly used form of rennet. This rennet, called Marzyme, is derived from the pure culture fermentation of the organism Mucor Miehei. It should be stored at temperatures below 41F and away from direct sunlight. Use 1/4 tsp. in 1/4 cup cool water for 1 or 2 gallons of milk.
