Sensory Profile

Elegance is excellent at producing fruity varietal aromas of terpene origins, as typically found in Riesling, Pinot Gris, and other aromatic white wines with floral and perfume like aromas. 

Other Noteworthy Characteristics

This yeast produces large amounts of the enzyme beta-glucosidase during growth which allows for the release of bound terpenes in aromatic varieties.  Glycerol production is moderately high, increasing mouthfeel. Nitrogen demand is low-moderate. It ferments well at cold temperatures, maintaining steady fermentation down to 50° F.  Additionally, it favours the consumption of fructose, the highly sweet sugar responsible for most residual sugar in wines.

How to Return Goods for Refund
