Our Dark of the Moon Black IPA homebrew kit is an extension of the very successful recipe we published in 2011. This version incorporates a new grain from Briess Malting, Midnight Wheat, which provides a black color without imparting a harsh roasted bitterness which would overpower the aroma of the citrusy Cascade dry-hop. Black India Pale Ale, also called Cascadian Dark Ale, is a style which dates back to at least the 1990s and in recent years has seen a large boost in popularity due to its prominent hop character and tamed roastiness reminiscent of a German Schwarzbier. At a gravity of 1.065, the resulting ale will end up around 6.5% ABV with a bitter but balanced 43.5 IBU and a very dark brown color with ruby highlights around the edges. A hefty but lush ale you will enjoy in place of the ubiquitous American IPA. Enjoy the ease of making it with our premeasured ingredient kit.   • This kit contains all the ingredients you'll need to make five gallons of beer. You will be following a two stage fermentation system using a plastic bucket as a primary fermentor to contain the beer until heavy foaming ceases. The beer is then siphoned into a secondary fermentor, a five gallon carboy where the beer stays until fermentation is complete.

    Be sure you have all the equipment below before getting started. We carry everything you'll need to get brewing.

    How to Use
    Equipment Needed:
    • Boiling kettle 4 gallons or larger, made of stainless steel or enameled steel.
    • A stirring spoon.
    • Plastic bucket (primary fermentor) of at least 6 gallon capacity and a lid.
    • A 5 gallon bottle (secondary fermentor).
    • Fermentation lock and stopper.
    • Siphon assembly and bottle filler.
    • 55 twelve oz. Beer bottles, or an equivalent amount of larger cappable bottles.
    • Bristle bottle brush, Cleaner, such as TDC, and Sanitizer, such as BTF Iodophor Sanitizer.
    • Sieve strainer and a saucepan.

    • 3 lbs. Light Dry Malt Extract
    • 3 lbs. Dark Dry Malt Extract
    • 1 lb. Dry Rice Extract
    • 0.75 lb. Midnight Wheat Malt
    • 0.25 lb. Extra Dark Caramel Malt (Caramel 120)
    • 0.5 lb. Dark Caramel Malt (Caramel 80)
    • 4.6 g Gypsum
    • 0.6 g Calcium Chloride
    • 0.3 g Epsom Salts
    • 3.5 g Beer Yeast Nutrient
    • .5 oz. Nugget Hops (13.8%) (27.6 IBU) (60 Minutes)
    • 1.5 oz. Perle Hops (5.3%) (11.1 IBU) (30 Minutes)
    • 1 oz. Cascade Hops (6.8%) (4.8 IBU) (Dry Hop)
    • 6 oz. Corn Sugar for priming
