Get ready for plenty of interaction with ripe apples! In this class, Joe will lead you through the theory of making hard cider while demonstrating cidermaking with both fresh pressed and store bought juice. The Beverage People rental apple mill will be demonstrated. We will discuss apple varieties, dominant flavor characteristics of apples, cider styles, processing of the apples, testing sugar and acid levels, types of sugars, adjusting sugar and acid levels, yeast choices, fermentations, sulfiting and aging.
The instructor is Joe Hanson-Hirt, a familiar advisor to any of our retail store customers. Joe is The Beverage People's manager of both Merchandising and Manufacturing, and has worked several years of harvest seasons at the shop consulting with our customers while actively engaged in our beverage hobbies at home. He has recently developed new content for The Beverage People on the subject of Cider, including discussions and instructions for making heritage hard cider styles.
