Originating from its namesake town in the French province of Normandy, Camembert is a cows milk cheese with a bloomed rind and rich oozing texture when ripe, similar to Brie. As this cheese ages, the texture of its inner paste moves from that of a semisoft state to that of a ripe soft cheese. Humidity and Temperature control are key to the getting the Candidum Molds to grow desirably.
