No Brett Inside is a natural polysaccharide, called chitosan, derived from the fungus, Aspergillus niger. No Brett Inside can reduce Brettanomyces populations significantly from 3 x 105 cells/mL to 0 within 10 days of use, but provides no reduction of Brett off flavors, 4EP or 4EG, present in the wine at the time of treatment. This makes a No Brett Inside a preventative measure in reducing Brett or stopping excessive growth within the cellar.
How to Use
Use 4-8 grams per hL (26.4 gallons) of wine. Suspend No Brett Inside in 5 times its weight in non-chlorinated water and add to wine during pump-overs or during tank/barrel mixings. Allow No Brett Inside settle for 10 days before racking off.
