Seasonally, the carotene levels of cow's milk fluctuates and consequently the cheese color changes, creating demand for this additive. Use annatto at a rate of 1/10 mL per gallon of milk, dilute in a small amount of non-chlorinated water. Mix solution thoroughly into milk before adding rennet.
