YIELD: 1 packet sets 1 gallon of goat's milk.
DIRECTIONS: Heat 1 gallon of pasteurized goat's milk to 86 degrees F. Add one packet, let hydrate for 2 minutes, then stir to dissolve. Cover and let set at 72 degrees F for 12 hours or until thickened. Ladle curds gently into butter muslin lined colander, hand and drain 4-8 hours or until you reach desired consistency. Refrigerate and enjoy!
